Quick Hamburger Soup

I love soup!  I can eat it at any Season, but coming from a large family, having soup for dinner fed all of us and filled our tummies at the same time!

Being a SAHM I’m always looking for frugal ways to feed my family and this soup fits the bill, especially when your son eats a lot!

With school starting and all the activities that come with it, this quick Hamburger Soup is ideal for those busy nights!  This recipe is quick and easy to put together so you don’t have to put much thought into it!

I adapted this recipe from my Mom’s Salisbury Steak recipe, which I’ll post at a later date.  But my Mom’s recipe was different in the fact that she made a “red” gravy instead of a “brown” gravy.  Since my family loves my Mom’s Salisbury Steak recipe, I thought, why not make a soup out of those great flavors!  I used the ground beef, tomato soup, and tomato sauce that are in that Salisbury Steak recipe.  But I added a few other ingredients to make this soup, including the Radiatore pasta.  If you don’t have the Radiatore pasta, any pasta would do.  You can also add vegetables to this soup, like corn or green beans would be delicious.  My Husband and I love vegetables in soup, but my kids don’t, so I left them out this time.  Instead, we had a salad with our soup and some nice cheddar biscuits.

With or without vegetables in your soup, either way, this recipe is so easy to make!  All you have to do is dump the ingredients into the pot, bring it to a boil, simmer, and enjoy!  Like most soups really!

Quick Hamburger Soup


  • 1 Tablespoon oil
  • 1 Tablespoon butter
  • 1/2 large onion, diced
  • 1 Tablespoon garlic, minced
  • 1 lb ground 85% ground beef
  • Salt and Pepper, to taste
  • 2 (10-3/4 oz) cans tomato soup, + 1-1/2 cans of water
  • 1 (8 oz) can tomato sauce, + 1/2 can of water
  • 8 oz (1/2 of 16 oz box) Radiatore pasta
  • Heat your water to cook your pasta.
  • Heat oil and butter in a large pot. Add onion and saute until it begins to soften. Add garlic and stir. Add ground beef and cook until the beef is no longer pink inside. Drain off the grease.
  • Add Salt and Pepper to your liking.
  • Stir in the tomato soup and tomato sauce along with the water for each can. Bring to a boil over medium-high heat. Once it starts to boil, turn your heat down low. Simmer your soup for 20 minutes, then add your cooked pasta. Stir and cook for another 10 minutes. Serve and Enjoy!
