My Grandma’s Potato Salad has Pickles!

With Easter right around the corner we’re all going to gather at my brother’s house.  My sister and brother-in-law always do an Easter Egg Hunt in his yard for all the little kids.  Now that mine are grown out of that age, it’s nice to watch the nieces and nephews run around trying to find the Easter eggs.  My Mom usually provides the main dish, which in this case will be the Ham.  My brother will start cooking the ham at his house early in the morning.  Each sibling that is going will bring something, whether it be a covered dish, side, appetizer, dessert or drinks.  We usually have so much food, it’s hard to get to everything, but I sure try!!

Potato salad with pickles

 

I’m going to make my grandma’s potato salad and take that along with a covered dish.  A holiday wouldn’t be a holiday without Grandma’s potato salad!  I remember helping my Grandma cut up the potatoes and she looked over and said to me “let’s not cut these chunks to big that people will choke on them!!” Haha  I hear that every time I’m cutting potatoes!

When people hear that my Grandma’s potato salad has sweet pickles in it, they think it’s odd.   As a matter of fact, when I gave my husband some for the first time, he said “is there pickles in this?”.  But after some coaxing, he tasted it and said it was pretty good!  Now, my grandma’s potato salad is the only potato salad he’ll eat.

Anytime is a good time for us to get together, there’s hugging, talking, a lot of laughter, and of course, eating!  If any of us hear someone isn’t doing anything on a holiday, we tell them to stop by.  Maybe they’ll even want to try out the Potato Salad with pickles!

Grandma's Potato Salad with Pickles

Ingredients

  • 5 lb bag of potatoes
  • 3 stalks celery, sliced
  • 3 stalks green onion, sliced*
  • 1/3 cup sweet pickles, chopped
  • 6 hard boiled eggs
  • salt & pepper
  • 1 cup salad dressing or mayonnaise**
  • Boil potatoes with skin on until fork tender. Meanwhile, cut up your celery, onion, pickles and hard boiled eggs; place in a large bowl. After your potatoes are drained and cooled, peel off the skin and cut them up. Place in the large bowl with the celery. Sprinkle with salt and pepper. Add salad dressing and stir until combined. After it's all combined, I sprinkle paprika over the potatoes, it's not necessary, I just like how it looks!
  • *After you slice the green onion, place the slices in a colander and rinse the dirt out. I've also used a small yellow onion, chopped if I didn't have the green onions.

    **My Grandma always used salad dressing. I have used mayonnaise and it still comes out good. (Sorry Grandma!) It's what ever you prefer.
